Graze by Sam’s Udon Noodle Salad
Ingredients
2 cups baby spinach (uncooked)
7 oz udon noodles (cooked)
3 Tbsp edamame
2 Tbsp carrots, shredded
2 Tbsp radish, shredded
2 Tbsp green onion, diced
2 tsp sesame seeds (garnish, on top)
1 oz peanuts, rough chopped (garnish, on top)
Sprinkle Furkake (Japanese seasoning blend for garnish... optional, but it’s really delicious) Add chicken or shrimp (optional)
Directions
Place all ingredients in a bowl (except for the garnishes on top) and toss. Garnish and enjoy!
